Seasoning

The seasoning is the most important phase that, thanks to the salt, the herbs and a perfect environmental condition for the temperature/humidity/ventilation assure a good drying process of the meat that allows the conservation of the ham without the use of any preservative.
During the seasoning, the essential oils of the herbs are transferred to the ham by the fat naturally present in the meat.
Essential is the climate of Saint Marcel, which determines the way the ham is dried and the quality of the final product, unique in its panorama.
